Its abstract reports associations with saliva uptake, the proportion of fine bolus particles, viscosity changes after adding alpha-amylase and cracker cellular structure. These are correlations in a particular food system. They do not establish one physical mechanism for every food described as melting.

Following the change over time

A careful sensory note can separate the initial structure, the change during eating and the residue that remains. This is an observation framework, not a universal numerical scale. Keeping the stages distinct makes it easier to say what actually felt different between samples.
