Measurements in a study of matcha samples from the Chinese market differed for chlorophyll a, chlorophyll b and total chlorophyll. A single concentration or a/b ratio should therefore be reported with its sample and method, not presented as a property of all matcha.

How shading influences chlorophyll

A 2022 study of Fuding white tea plants found more chlorophyll under shade than in the open-air control. The 85% shade treatment had more chlorophyll than the 95% treatment. In this experiment, deeper shade did not simply mean more pigment.

The result explains why growing conditions matter without establishing a universal shade duration, harvest ranking or pigment threshold for a commercial grade.

Color, processing and storage

Pigment changes are part of tea processing and aging. Color can help describe appearance, but a bright green powder is not proof of an exact amino acid amount, superior flavor or a particular grade.

In a two-month matcha storage experiment, green color values decreased with increasing temperature and time. Keep powder well sealed and protected from heat, light and moisture. If it is refrigerated, let the sealed container warm before opening to limit condensation.

A storage experiment does not establish an abrupt pigment-destruction threshold at 80°C during preparation. Time, temperature and the surrounding conditions matter; a brief hot preparation is not equivalent to prolonged storage.

What color does not tell you about health

The pigment and cultivation studies measure plant composition and appearance, not detoxification, blood oxygenation, wound healing or cancer prevention in matcha drinkers. Those benefits should not be inferred from the green color or from a comparison between chlorophyll and hemoglobin.

Choose matcha for its flavor and intended use rather than treating pigment intensity as a dose of a health treatment.

Comparing pigment and color results

Chlorophyll a and b are individual pigment measurements; an instrumental green coordinate measures appearance. These results are related but not interchangeable. Compare dry powders under consistent lighting, and keep measurements from prepared drinks separate. A photograph cannot establish a pigment concentration, especially when exposure and screen rendering differ.
