Temperature is one choice among several. Powder dose, water volume, mixing and the tea itself also shape the drink. A fixed table cannot reliably sort every product labelled ceremonial, premium or culinary.
A sourced recipe example
Ippodo’s Matcha Latte recipe uses 3 g sifted powder with 90 ml water at 80°C, whisked for 15 seconds before milk or soy milk is added. These quantities belong to that recipe. They are not the definition of matcha, and the instructions do not establish a chemical damage threshold at 80°C.
Use producer instructions as a starting point. When changing temperature, keep the other quantities stable. Describe your result as a preference for that tea and recipe rather than an optimum for all matcha.
Dispersion is not complete dissolution
Matcha is ground leaf material. Some components enter solution, while mixing distributes fine particles through the liquid. A smooth-looking drink is not proof that every particle or compound has dissolved. Settling after mixing and dry clumps are different observations.
Ippodo recommends sifting to improve smoothness. If you see dry lumps, check sifting and mixing rather than assuming the water was incapable of dissolving matcha. Raising heat is not the only possible correction.
What preparation instructions cannot prove
A recipe recommending cooled water does not prove that hotter water instantly scorches amino acids, destroys catechins or causes chlorophyll to fail above one temperature. Chemical degradation claims need research specifying exposure time, temperature and the material tested. They cannot be inferred from a recipe.
Cold preparation should not be called nutritionally incomplete merely because no hot water was used. There is no general requirement to wait hours for complete dissolution. For iced drinks, distinguish the mixing method from the final serving temperature.
A repeatable comparison
Use the same tea, bowl, powder dose, water amount and mixing method. Measure the water with a suitable thermometer and identify whether the reading is in the kettle or bowl. Change only temperature for the next preparation. Compare at comfortable drinking temperatures, recording bitterness, aroma and texture separately.
Cooling for a fixed number of minutes cannot guarantee an exact reading: volume, vessel and room conditions differ. Steam and bubbles are estimates rather than calibrated indicators. A thermometer is more useful when a numerical comparison matters.
