Where is this Ise Bay matcha grown and made?
No. 58 comes from Ise Bay on Japan’s Pacific coast, within Mie Prefecture. It is made from the youngest shade-grown Camellia sinensis leaves gathered during the early spring flush. The leaves are hand harvested and traditionally stone ground. The sole ingredient is pure shade-grown Japanese green tea.
How do you prepare it as usucha or koicha?
For usucha, or thin matcha, whisk 1.5 to 2g of powder with 75ml of water at 60 to 70°C until a light foam forms. For koicha, or thick matcha, whisk 3.5 to 4g with 40ml of water at the same temperature to produce a thicker drink. A bowl and bamboo whisk, called a chasen, can be used for traditional preparation and a smooth consistency.
The amount of matcha can be increased for a stronger cup or reduced for a lighter one. Beyond traditional whisked matcha, the powder is also intended for refined culinary use.
