The ceremonial option uses ichibancha first-flush leaves and has a refined, umami-rich profile with minimal astringency and a smooth, non-bitter taste.
Production uses the Uji shade-growing method called oishita saibai, with plants shaded for weeks before harvest. The harvest takes place during spring’s first flush. Ichibancha leaves are reserved for the Ceremonial Grade, and the youngest, most tender leaves are selected for this matcha.
