Your matcha used to be green, bright, vibrant, sexy, smelling amazing. Now, it looks sad, desperate, and smell fishy. Here's what happened. Matcha is the dramatic queen of the tea royalty. It hates everything. Lights, enemy. Air, enemy. Heat, that sunny spot on your counter that you love so much? Well, believe it or not, it's an enemy. The moment you open your tin of matcha powder, oxidation starts. The chlorophyll breaks down. The color fades. The flavors goes flat. That bright green that you paid so much for, it's slowly dying. Okay, that was dramatic, but you get the point. Here's what to do. Store your matcha in the fridge. Not the door, the back of your fridge. The darkest, the coolest, the better. Second, keep it sealed, airtight. Do not let it open in the fridge. Third, try to use it within 4 to 6 weeks after opening. If your matcha has already turned brown or yellowish, it's not dangerous. It's just degraded quality. You can still use it for baking or for smoothies or with some syrups in your latte, I don't know. But drinking it straight, good luck. Consider it a lesson. I've been there.
