Just because it's green and it's powdered, doesn't mean that it's really matcha. Let me explain. All we hear everywhere is matcha green tea. And yes, matcha comes from the same plant as green tea. Same family, camellia sinensis. But green tea, you steep the leaf in the hot water. You let it infuse a few minutes, and then you remove the tea leaves and drink it. Matcha, the leaves are actually ground into really fine powder, and you whisk the powder in the water or in any kind of milk. Yes, you drink the whole leaf. Nothing left behind. That is why matcha has way more caffeine than just green tea. More flavor also. It's more intense, more powerful, more in your face, more dramatic. But, plot twist, all green tea powders are not matcha, but all matcha are green tea powders. I've seen green tea powders drink in Thailand. It's cheap, it's green, and it's really similar to matcha drinks, and often presented as iced powder green tea. You have everything here to be mistaken. But, real matcha is shade grown for weeks before harvests. It's historically made from Japanese tea cultivars, and it's stone ground slowly. That's how you obtain these vibrant green colors, smooth taste, and can have the benefit of L-theanine that keeps you calm and focused. So, next time someone offers you matcha and it's bitter and kind of yellowish, maybe it's not matcha, maybe it's just your neighbor lawn powdered in a can.
