You're staring at your matcha label with a lot of Japanese characters and you have no idea what they all mean. Here's your cheat sheet. I'm not going to try to pronounce those characters because I don't want to butcher the language and offend anyone. The good news, you don't need to read Japanese to understand if you are buying a good quality matcha. You just have to recognize a few things. These terms means matcha. If you don't see it, you might be looking at a green powder, not matcha, completely different things. Two, the origin. Look for those places. For instance, Uji, Kyoto, Nishio, Kagoshima. If you see those, you know exactly where your matcha comes from. Three, the harvest time. This means first harvest, Ichibancha, the good stuff that we all want to drink. Well, here you have the second harvest, that is good for lattes. And finally, the third harvest, that is better for baking, cooking. Last thing, the traditional grinding methods, stone mill, slower but better quality. Origin, harvest, grinding method, and the word matcha itself. You already know all that, but now you can spot them on a label. That's it. Now you're not guessing anymore.
