Your ceremonial grade makes a good latte? That means nothing. And here's why. First, ceremonial is not a Japanese thing. It's marketing invented by the West. There is no regulation. Anyone can slap a label on their matcha tins. They work, people. >> I don't know if it's appropriate here. Second, milk hides everything. Bitterness, harshness, and low quality. A splash of the oat milk of your choice covers it all. The real test, drink it straight. Just matcha and water. I'm not saying that you cannot mix your $80 matcha powder with milk. I do it myself. I'm just saying that if you want to know the quality of the matcha that you bought, drink it straight. Anyway, let's play the marketed game, but just be aware. The ceremonial grade is supposed to be the youngest leaves, the first harvest, the good stuff. When it's just water and powder, the matcha is supposed to be smooth, rich, creamy, sometimes a little bit sweet. No bitterness, or just a little bit. But not something that will make you like, "Ugh." Then the culinary grade, older leaves, stronger, more bitter. Not bad, right? Just made for a different job, like smoothies or baking stuff where you mixing it with other flavors. And here is where people mess up. They buy the culinary grade because it is cheaper. Okay, I understand in this economy. But it tastes bitter, weird, gross. And then you hear them say, "Matcha tastes like grass. It's disgusting." Hear me out. Hear me out. Hear me out. >> What if we didn't try to convince them? I don't know. I don't know. And maybe we'd keep the good stuff for us.
