## Who is Ippodo Tea?
**Ippodo Tea** is a Kyoto matcha house founded in 1717, offering balanced *Nodoka* to crisp **JAS-certified organic** blends, all from shade-grown leaves that yield vivid color and layered umami.

Shade-growing with straw screens for 20–30 days before harvest enhances chlorophyll and L-theanine; hand-picked premium leaves are steamed, aged, and slowly milled on **granite stone mills** to preserve flavor. Mastery extends to signature *Ummon-no-Mukashi* [koicha](https://best-matcha.com/glossary/koicha) and is guided by Masakazu Watanabe, a direct descendant safeguarding *three centuries* of Kyoto tea lineage.

## Compact sifter for quickly breaking up matcha clumps
The Ippodo Tea Matcha Sifting Sieve is a compact tin utensil designed to break up clumps in matcha powder. Its approximately 50 g capacity allows a larger amount to be sifted in advance for home use, a tea ceremony, or a gathering where several servings will be prepared.

### Why sift matcha before whisking?
Matcha can form clumps as it sits because of static electricity, moisture, and the weight of the powder. Once formed, those clumps can make the matcha harder to whisk properly and leave the taste less smooth. Passing the powder through the sieve breaks up the clumps before preparation.

The sieve can be used immediately before making tea or to filter a larger amount ahead of time. That advance preparation is useful when serving matcha with sweets to a group. The sifted powder can also be transferred to a tea canister or placed on the table for people to prepare their own tea.

### How to use the included bamboo spatula
Place matcha powder on the wire mesh, then move the included bamboo spatula, called a *takebera*, across the mesh. This pushes the powder through and leaves it free of clumps. Avoid filling the sieve too heavily or moving the spatula too vigorously, as powder may spill onto the table or floor.

### Compact matcha sieve specifications
- **Material:** Tin
- **Made in:** [Japan](https://best-matcha.com/glossary/japan)
- **Approximate dimensions:** 6.8 cm diameter and 8.5 cm high
- **Approximate capacity:** 50 g of matcha powder
- **Included accessory:** One bamboo spatula
The compact size is suitable for placing on a table while still holding enough powder for several servings. The sieve is offered year round as part of Ippodo Tea’s matcha utensil range.

### How should the tin sieve be cleaned?
Remove remaining matcha with a dry cloth or tissue. Do not wash the sieve with water, put it in a dishwasher, or use dishwashing detergent. Water can cause the tin sieve to rust. This dry-cleaning requirement is the main care limitation to consider before buying.
